Christmas cranberry oatmeal cookies

Christmas time calls for tasty, but healthy cookies! These cranberry oatmeal cookies do just that and are easy to knock together in no time. Cranberries provide the rich oatmeal base with a touch of brightness and scream Christmas.

These festive treats are hearty and delicious packed with only premium and healthy ingredients. You are in complete control of the ingredients you use when baking and why not put your best foot forward with nutritious and clean ingredients. Easy switches go a long way!

Easy switches:
Peanut butter ➡️ Peanut Butter Powder 🥜🥜
Butter ➡️Coconut Oil
Flour ➡️ Oat flour
Milk Chocolate ➡️Cacao nibs

Ingredients

1 cup oat flour (blended rolled oats)
1/4 cup @uncletobys rolled oats
2 tbsp @Marmadukes Original peanut butter powder
1 teaspoon cinnamon
1/4 teaspoon salt
1 teaspoon vanilla extract
1 large egg
1/4 cup packed coconut sugar
1/2 cup coconut oil (melted)
1/2 cup cranberries, dried

Directions

1. Combine all ingredients except the cranberries in a large bowl and mix thoroughly until combined
2. Add the cranberries and stir again
3. Place the mixture in the fridge for 30 minutes allowing the dough to thicken
4. Preheat a fan forced oven to 180 C
5. Scoop the mixture into 6-8 evenly sized balls (press them down so they aren't overly tall) and place them on a lined baking sheet
6. Bake for 15 minutes
7. Let cool for 15 minutes and enjoy!
